:: CHEESE-MAKING WORKSHOPS ::
We are located in one of NSW’s finest dairying districts, so it is not surprising that Cheese-making workshops are a special part of Duck Under the Table .
What will I learn? Different styles of cheeses can be made quite easily at home. Our Workshops will teach you how to make “Soft” cheeses (such as ricotta, camembert, quarg and mascopone), “Hard” styles such as romano, and even “Blue” varieties.
Who can attend? Our workshops are suitable for the complete novice. No prior knowledge is assumed. The workshops are popular with school teachers, chefs, home economists, hobby farmers, dairy farmers, cheese enthusiasts and anyone just interested in learning more about cheese. Classes are limited to a maximum of 16 people and you will work in small groups of 3 or 4.
How long are the Workshops? Workshops are scheduled over weekends and run from 9.30am and conclude at 3.30pm.....but check the Schedule page for your particular Workshop's arrangements. A wonderful morning tea and light lunch, with cheese tastings is also provided both days. What do I need to bring? Full workshop requirements will be sent to you, when a booking form and payment is received. You will need to supply your own milk, either cows, goat or sheep, which can be bought from your own farm, friendly farmer or local supermarket. A few plastic containers, to take your cheese home in, a small esky and a few T Towels is also required. All other materials to make your cheese is supplied.
Who is the Cheese-Maker? Carole Willman is a qualified cheesemaker and TAFE tutor who has conducted over 400 home cheesemaking workshops throughout Australia. She co-authored Australia’s most popular home cheesemaking book “Home Cheesemaking”, with husband Neil, who is also a cheesemaker and cheese judge.
