Clive Ward - Chef, Teacher, Caterer

Clive Ward was a Head Steward for Qantas and is now a well known cooking teacher on the Mid North Coast - teaching at TAFE and presenting a popular radio program on local ABC "Cooking with Clive".  He also has a successful catering business and is a popular presenter at Duck Under and has delighted us with his vast knowledge of cuisines from around the world - from Thai to desserts and pastries.

       

 

Katia Malouf - Home Cook

Katia Malouf is renowned for her cooking, especially Lebanese food.  Kartia shares many recipes from her native Lebanon, as taught to her by her mother.  A warm and giving presenter, Katia's classes are not to be missed and thoroughly enjoyed by all who attend.  

       

 

Craig Kingston - Chef & Producer, Red Belly Gourmet

Craig Kingston is a local chef and producer with over 20 years experience in commercial cookery, having gained knowledge and skills through a variety of establishments from 5 star hotels, small cafes and private catering.  Craig lives at Copeland, near Gloucestor with is wife, where he produces the "Red Belly Gourmet" range.  At "Magic Hill", a fertile property nestled amongst the foothills of the Barrington Tops, Craig grows ingredients for his six products, which are free of any non-organic pesticides, herbicides and fertilizers.   Craig regularly presents Tapas Style Fingerfood Classes, Food Presentation & Sensational Salads classes at Duck Under.

 

           

 

Eric Robinson, "The Other Chef" - Producer & Chef

Eric Robinson decided that he wanted to be a chef at the age of 8 learning the basics from his mother and taking up an apprenticeship at 15, qualifying at 19 and holding an Executive Chef's position at 21.  He has a vast experience and expertise in hospitality - as owner of Passionfish Brasserie in Coffs Harbour, Head Chef Xanadu Wines, Margaret River & Ca Marche Restaurant, Cassegrain Winery.  Having received high acclaim for his innovative style and passion for hand-made food, Eric has created "The Other Chef" - fine food products designed to enhance and lift the flavour of any dish and are easy and versitile to use at home.

Allison Forlico - Chef and Proprietor, Quasi Espresso, Crows Nest

Allison is a talented chef who co-presents Italian Favourites classes with me at Duck Under - she also is my triplet sister and together with my grandmother and mother, taught me alot about food and cooking.  Her style  can best be described as "comforting and home cooked" - her pasta dishes, winter soups & baking, together with great coffee are renowned at her small Espresso bar, Quasi Espresso, Crows Nest, which she has operated for the past 7 years.

       

 

Carole Willman - Home Cheesemaking Teacher - Proprietor Cheeselinks

Annette Greenhalgh - Proprietor Duck Under The Table

Annette is the proprietor of Duck Under and considers herself a "good home cook".  Annette regularly presents all Italian Favourites Classes - The Art of Pasta Making, Gnocchi and Italian Inspired Fingerfood.  She also conducts the popular "Ducklings Under the Table" classes - held during school holidays for children 7-12 years. 

    

 

Angela Hope - Talented and devoted home cook

Angela is a devoted and talented home cook who presents "Gluten & Sugar Free Classes at Duck Under.  A coeliac herself, Angela has a wonderful selection of tried and true recipes to create delicious food free of gluten and sugar. 

  

Chris Chandler - Cooking School Teacher, Recipe & Product Developer - Sydney

Chris Chandler has over 20 years experience in the hospitality industry.  She is a regular presenter at the Sydney Seafood School and is a consulant, recipe & product developer for the Chefs Tool Box.  Chris presented A Taste of Barcelona at Duck Under.

       

Petra Patz, Petra's Pantry -  Nabiac

It was a delight to welcome Petra to the Duck Under kitchen.  Petra is the proprietor of Petra's Pantry, a local producer who makes wonderful gingerbread for us all to enjoy.  You can find her at regular markets around the Manning Valley.  Petra shared with us her very own special German recipe for gingerbread and taught us the tricks on how to make your very own gingerbread house for Christmas.  A wonderful two days was had by all.
